Bear in mind, as you read the review of the Whalesbone in CD on page 190, that chef Steve Vardy is no longer in charge. Vardy moved to Newfoundland in 2007 (though has returned to open the latest installment of the Black Cat Cafe, on Preston Street – stay tuned). Vardy’s young sous chef at Whalesbone, Steve Wall, is in charge of the fish now, and you will find a report on Wall at Whalesbone under the Review category of this site.
FURTHER UPDATE: Steve Wall moved to Town Restaurant and then to Luxe Bistro. At the Whalesbone now is chef Charlotte Langley.
